Whether you love crab or simply want to understand what you’re buying, this session offers practical insights straight from a seafood professional with deep experience in sourcing and handling crab.


Takuya Hikita is the owner and chef of TSUKIJI KITCHEN and one of Vancouver’s most trusted seafood professionals. A former auctioneer at Tokyo’s Tsukiji Market, he brings rare firsthand expertise in selecting and handling top-quality seafood.

Since 2018, Takuya has been running Tsukiji Fish Market Inc. in North Vancouver, supplying seafood to the local community for over seven years. At Ask Takuya, he shares practical knowledge, behind-the-scenes stories, and answers your questions about fish, sourcing, and seasonality — directly from a true expert.
