In this session of Ask Takuya, we learn about Neglected and Underutilized Fish.

These are fish that are perfectly delicious, yet rarely make it to the market because of their unstable catch volume, low recognition, and sizes variation which make them harder to handle. As a result, many of these fish are discarded despite their true value.


Takuya's belief in “Reduce Mottainai (waste)” we have named these fish “Rescued Fish.”

Choosing Rescued Fish is not only a step toward reducing food loss—it also helps protect marine ecosystems and supports the local fishers. In other words, rescuing these fish means rescuing the ocean, people, and our future.

During this event, you will learn about Rescued Fish and enjoy their true flavors, brought out through careful preparation.
